When talking about the Future Onboard Experience (FOX), most passengers think of what they see and touch. Elegant tableware, refined materials, and thoughtfully designed service items are the most visible signs of change. Yet behind the scenes, an entirely different layer of design work plays a crucial role in shaping the overall experience.
At deSter, our contribution to the Lufthansa FOX program went far beyond the development of plates, trays, cutlery and glassware. As designers and engineers working closely with airline partners, we focused on the often unseen elements that enable exceptional service to happen with ease. These solutions may stay out of sight, but they are fundamental to delivering comfort, quality and consistency across all cabins.
Elevating Business Class dining through engineering
A key example is the Business Class main course service. In collaboration with the culinary concept created by Johann Lafer and our colleagues from Gate Gourmet, the challenge was clear: Meals needed to be prepared and presented with the same care, temperature, and quality guests expect in a restaurant environment.
To achieve this, deSter developed a new steel casserole designed specifically for onboard use. Its construction allows proteins such as fish or meat to be heated separately from accompanying components. This precise temperature control ensures that each element reaches the guest in optimal condition, preserving texture, flavor, and presentation. The result is a dining experience that feels deliberate, premium, and satisfying, even at cruising altitude.
Making dessert service more visible and engaging
The upgraded Business Class experience also extends to dessert. To support a more appealing, personal cake service, we designed a compact cake stand that integrates seamlessly with the service trolley. Despite its space-efficient footprint, it significantly improves how fresh cakes and desserts are displayed.
For seated guests, the selection becomes clearly visible and easier to choose from. For cabin crew, the solution supports smooth handling and an elevated presentation, turning the dessert moment into a highlight rather than a routine step in the service flow.
Smart solutions that enhance Economy Class service
Innovation within the Lufthansa FOX program was not limited to premium cabins. In Economy Class, thoughtful design has a direct impact on choice, efficiency and service quality.
deSter developed a dedicated drawer attachment for the service trolley that increases meal capacity while expanding the range of options offered. Instead of presenting only two main course choices, cabin crew can now offer three. This additional choice brings a tangible improvement to the passenger experience while keeping service structured and manageable.
At the same time, the system is engineered to support crew workflows. It improves organization, reduces handling complexity, and contributes to a safer, more efficient service, even during peak periods.
